Ingredients (for 3 servings):

  • 3 small to medium yams (inhames)
  • 3 passion fruits (I used sour ones, but sweet ones work too)
  • Stevia and/or demerara sugar (I used 10 drops of stevia and 1 tbsp of demerara sugar)
  • Water (just a little, to help blend)

Instructions:

Steam the yams, cut in half with the open side facing down. When they are soft (about 20 minutes), remove, let them cool a bit, and peel them using a knife. Set aside. Blend the pulp of the passion fruits (I blended them with the seeds and didn’t strain, but you can strain if you prefer). Now, blend the concentrated passion fruit juice with the yams, a little bit of water, and the sugar and/or healthy sweetener. If it’s hard to blend, add a bit more water and taste to check if it needs more sweetening (this depends a lot on the passion fruit, but the goal is to sweeten as little as possible). Done! Now just pour into cups and refrigerate!
